Ingredients:
Ingredients:
4 boneless, skinless chicken breasts
1 tsp. salt
1 tsp. sugar
white pepper
garlic powder
soy sauce
flour
2 eggs
3 c. milk
cracker meal
1 pkg. almonds
vegetable oil
lettuce

Directions:
Directions:
Marinate chicken in salt, sugar, a coating of white pepper, a coating of garlic powder and enough soy sauce to wet the ingredients. Marinate at least 2 hours. Then coat chicken with flour. Soak chicken in a milk bath of 2 eggs and 3 cups milk. Coat with fine cracker meal well, while patting in the sliced almonds. Deep fry in skillet with vegetable oil until brown, turning only once. Place on a rack in a pan and put in preheated oven at 275 degrees. This allows chicken to complete cooking and drains excess oil. For serving cut into 1/2 inch sliced strips and serve on a bed of lettuce. May serve with a side of white rice. Drizzle with sweet and sour sauce.
