Soak about a cup of wood chips in water for at least ten minutes.

Turn on gas barbeque so that there is a hot section and a cold section (our barbeque has three burners so I turn on the two outer burners and leave the middle one off.

Slice bacon into portions approximately 3/8 of an inch thick.

Drain the woodchips and envelope them in a piece of heavy duty aluminum foil. Poke a few holes or slits into the top of the package.

Place the woodchip package directly onto one of the hot burners. Once it starts producing smoke arrange the bacon slices on the cool section of the barbeque. Once the indirect heat has cooked the bacon slices through you can slide them onto the hotter side of the grill to crisp them up a bit.

Enjoy as a the filling for a sandwich - you can add tomatoes or mayo if you must but I like it just on it's own.
