Cake:
3/4 cup shortening
1 1/8 cup sugar
3 eggs
1 1/2 tsp. vanilla
2 1/4 cup flour
3 tsp baking powder
3/4 tsp salt
3/4 cup milk

Frosting:
1/2 cup milk
2 tbsp. flour
1/2 cup butter
1/4 cup shortening
1/2 tsp vanilla
1 cup sifted icing sugar
dash salt
3 squares baking chocolate, grated

Cake:
Cream shortening and sugar. Add eggs, one at a time and beat after each addition. Add vanilla and beat until light and fluffy. Sift dry ingredients and add to creamed mixture alternately with milk.
Pour batter into 2 round cake pans which have been oiled and floured.
Bake at 350 degrees for 35-40 minutes.
Icing:
In measuring cup add flour to milk. Microwave on high for 30 seconds and sitr. Repeat until mixture is firm. Cool.
Beat butter and Crisco together Add cooled flour mixture, icing sugar. vanilla and salt. Beat on high for 5 minutes.
Add grated chocolate and mix.
When cake is cool, turn one layer onto serving plate and top with some icing. Place second layer on top and cover with remaining icing. Refrigerate.

This recipe was adapted from Jeannie's Bakery on Notre Dame in Winnipeg. Most Birthdays were celebrated with one of these cakes.
Since we live in Saskatoon, Nana learned to make her own version of this popular Birthday Cake.
