1 egg
2 tablespoons butter
1/2 cup light brown sugar
1/4 cup currants
1/4 cup shredded sweetened desiccated coconut
2 tablespoons chopped pecans
1/2 teaspoon vanilla
Red jam or jelly

Directions:
Directions:
Use commercial tart shells or make your own. You will need about 18 - 2 inch shells.
Put 1/2 teaspoon of jam or jelly in each uncooked shell.
Mix together all of the filling ingredients except the jam.
Add filling to shells. Do not over fill, a generous teaspoon of filling is usually enough.
Bake at 350 º F for 20 minutes or until the tarts are pale gold on top.
Can omit the currants or nuts from the tarts and use a little more coconut.
