1 loaf of bread (a couple of days old)
1 onion diced
3 - 4 stalks of celery diced
2 - 3 tablespoons of butter
1 large tart apple peeled and grated
dried sage
salt,and pepper

Directions:
Directions:
Using a food processor make bread into coarse crumbs.
Dice onion and celery.
Melt butter in a frying pan on medium heat and cook celery and onion.
Do not brown.
Add sage to taste to onion and celery and cook for a couple of minutes.
Peel the apple and coarsely grate.
Mix together and use to stuff chicken or turkey.

Can use any kind of bread or buns. Can store the bread or buns in the freezer until ready to use. How much sage you need depends on the kind you are using. If you are using ground commercial sage or poultry seasoning you will only need a heaping teaspoon. If you are using crumbled sage that you have grown you will need 1-2 tablespoons (be sure to exclude the stems).
If you are using fresh sage you will need more.
You can omit the sage and use parsley or thyme
This can be made ahead and stored in the fridge for a few days or frozen for longer storage.
Can cook the dressing in a covered casserole dish if it does not fit into the fowl.
