1 lb. whole wheat spaghetti
1 1/4 lb. lean ground turkey
12 oz. fat free ricotta
4 Tbsp. Parmesan cheese
1 egg
1 clove garlic
1/4 cup tomato paste
29 oz. can diced tomatoes
1 cup tomato sauce
2 cups reduced fat shredded mozzarella
Italian seasoning to taste

Preheat oven to 375º. Cook spaghetti; drain; set aside. Cook turkey, stirring occasionally until browned. Drain and remove from skillet; set aside. In same skillet, add onion, garlic and cook until tender. Stir in diced tomato, tomato sauce, tomato paste and Italian seasoning. Bring to a boil. Reduce heat and add turkey. Simmer 5 minutes. Place ricotta cheese and egg in a food processor or blender and puree until smooth. Coat pan with cooking spay. Arrange spaghetti in pan like a crust. Add ricotta mixture. Pour turkey sauce over ricotta mixture. Sprinkle with mozzarella. Bake for 20 minutes.
