1 tbsp. Olive Oil
1 1/2 lbs. Chicken, cooked & torn
1/4 c. Onion, chopped
1 can Chicken Broth
1 small can Chopped Green Chilies
1 can Great Northern Beans
1 tsp. Garlic Powder
1 tsp. Cumin
1/2 tsp. Oregano
1/2 tsp. fresh chopped Cilantro
1/8 tsp. Red Pepper

Directions:
Saute the onions in the olive oil. Put all ingredients in a crock pot or on top of stove in a sauce pan with a lid. Add the sauteed onions. It's best if you simmer for 2 - 3 hrs so the cilantro and other ingredient flavors come out more. Top with Monterrey Jack Cheese.
