2-8 oz chicken breasts halved
fresh ground black pepper
Kosher salt
1 egg
1/4 c sparkling water
fresh parsley
1/2 c chicken stock
1/2 c flour
2 T extra virgin olive oil
3 T butter
2 c mushrooms, sliced
3/4 c marsala wine
2 T lemon juice

Directions:
Directions:
Pound the chicken breasts to 1/2" thickness. Season with salt and pepper. Combine egg with sparkling water and 1 T chopped parsley till mixed well. Put the flour in a separate bowl. Coat chicken with egg mixture then dredge in flour. Heat the oil in large skillet over med heat till hot but not smoking. Add 1 T butter to skillet and cook chicken till golden brown. Put chicken to side on warming plate. Add the remaining butter to the skillet and cook mushrooms. Add wine and scrape the pan to remove any browned bits. When wine has reduced by half, add chicken stock and lemon juice and cook till sauce begins to thicken. Add chicken to pan and lower the heat till pieces are cooked through and sauce has thickened. Salt and pepper to taste.
