2 bunches asparagus, stems snapped
1/2 c extra virgin olive oil
1/2 c red wine vinegar
4 T grated Parmesan
Kosher salt to taste
2 hard-boiled eggs, crumbled

Directions:
Directions:
Boil asparagus in water 5 min. and immediately plunge into ice water bath. Drain and pat dry. Combine vinaigrette ingredients and toss with asparagus. Sprinkle with eggs before serving.
