3 egg yolks (room temperature)
3 T wine vinegar
1 stick butter
1/2 t. salt
pinch of white pepper
1 t. tarragon
1 t. chopped chives

Directions:
Directions:
Place all ingredients in a enamel saucepan, and allow to stand together 20-30 minutes before they reach room temperature. Just before serving, cook over medium heat for 3-4 minutes, while stirring constantly. When sauce begins to thicken, remove from heat. The sauce may be served at room temperature.
(Note: Must take sauce off heat before you think it is ready. Can always put it back on. It is ready when starting to thicken and sticking to sides. Will get much thicker when it sits. Water may be added.)
