1 cup milk
¼ cup white sugar
1 teaspoon salt
½ cup shortening
2 teaspoons sugar
2 packs of dry yeast
2 well beaten eggs
5 to 5 1/2 cups all purpose flour

Directions:
Directions:
Dissolve 2 teaspoons of sugar in ½ cup warm but not hot water and sprinkle in yeast.
The yeast will bubble up so use at least a bowl with 1 cup volume.
Let stand 10 to 15 minutes.

Warm milk but do not boil. Put sugar, salt, and shortening into a very large bowl and add warm milk. Stir to melt the shortening and dissolve the sugar.
Once the milk has cooled to room temperature or slightly warmer add yeast mixture. Then add eggs and mix well.
Add 3 cups of flour and stir until smooth.
Add remaining flour and with a rotating motion of your hand knead for 5 to 7 minutes. The dough should no longer be sticky. May need to add a bit more flour.
Cover and place in a warm place. Let rise until double its' original size (about 1 1/2 to 2 hours).
Punch down to original size and let sit for 10 minutes covered with a cloth.

Shape rolls and place on greased baking tray. Let rise for 40 to 60 minutes. Bake at 375 º F for 15 to 20 minutes.

To make Fan Buns;
After you let the dough rest on a floured surface roll it out until ¼ inch thick. With a brush coat it with melted butter. Cut into strips about 1 inch wide.
Pile four strips up and cut into 1 to ½ inch pieces.
Place the pieces in greased muffin tins with the narrow edge of the strips down. Let rise for 40 to 60 minutes and bake as before.
