1 Qt Strawberries, sliced
1/4 Sugar, plus 3 Tbsp
1 1/2 Cups Bisquik
1/3 Cup Milk
2 Tbsp Unsalted Butter, Melted
1/3 Cup White Chocolate Chips
2 Tbsp Mint
1/2 Cup heavy Cream
1/2 tsp Vanilla

Preheat oven to 425º

In a small bowl combine strawberries with 1 Tbsp Sugar. Set aside.

In a large bowl, whisk together Bisquik (or whatever baking mix you use) and 1/4 cup sugar. Stir in the milk and butter, then fold in the white chocolate chips. Drop dough onto greased baking pan, making 6-8 shortcakes. You can pour the dough onto a floured surface and cut them into triangles, but they look better and more homey if you just spoon them. Bake 8-10 minutes or until golden brown. Remove from oven and cool completely.

Add chopped mint to strawberries just before serving, and toss to combine.

With electric hand mixer, whip the cream in a medium bowl with remaining sugar and vanilla. Slice each shortcake in half. Place bottom half on serving plates and spoon strawberries over each half. Add dollop of whipped cream, then add shortcake top. Garnish with a bit more whipped cream, a strawberry slice, and 1-2 whole mint leaves.

The mint is entirely optional. If you don't want to use it just leave it out. If you're adventurous try substituting fresh basil!
