5 tbsp. unsalted butter
3 tbsp. flour
2 cups whole milk
1/4 tsp of salt
1/4 tsp cracked black pepper
pinch of nutmeg
3 1/2 o grated Gruyere cheese (about 1 and 1/3 cups)
8 slices of sourdough bread
4 tsp of Dijon mustard
1/2 Lb of thinly sliced black forest ham
1/2 lb of thinly sliced oven roasted turkey
4 eggs

Directions:
To make sauce melt 3tbs of butter in a saucepan over low heat, then whisk in flour making a roux, whisk in milk and bring to a boil, whisking constantly. Reduce to a simmer, and whisk occasionally. Add salt, pepper, nutmeg, and 1/3 cup of cheese until cheese is melted. Remove from heat and cover with a sheet of wax paper. Spread sauce evenly over 4 slices of bread. Sprinkle rest of cheese over them, spread mustard on the other 4 slices top with half turkey and half ham. Invert onto cheesed topped bread to form the sandwiches. Melt 1 tbl into skillet over low heat cook sandwiches flipping on both sides until golden brown remove from skillet to baking pan.

Pre heat broiler

TOP each sandwich with remaining sauce and broil until its bubbly golden turn off broiler and keep on bottom shelf to keep warm

Heat frying pan with butter then crack eggs into skillet
cook until over medium or over easy depending on how you like your eggs(you want yolk to be a little running when cut into)
TOP each sandwich with egg serve immediately

I serve with a side of jelly(blackberry) to dip sandwich in. It's like a grilled ham and cheese with turkey and an egg over it and with jelly a Monte Cristo combined as 1) Great for brunch or breakfast. Also Gruyere is kind of expensive but soooo worth it for this, but you can substitute it for Swiss also Seems very time consuming but not really once you get the hang of making it and tweaking it to your own liking I added turkey and jam original doesn't call for either!
