Beef Enchiladas Recipe

1/2 lb of Colby Jack Cheese
1/2 lb of Pepper Jack Cheese
2 lbs of Ground Beef
1 pckg of corn tortillas
1 corn on the cob
taco seasoning
chili flakes
1 jalapeño
1 can of black beans
1/2 Chopped yellow or white onion
salt and pepper
2 large cans of La Victoria Red Enchilada Sauce

Directions:
Directions:
Preheat oven to 375
In large sauté pan brown meat, onion, corn, black beans, jalapeño together
then add salt and pepper, chili flakes and taco seasoning
Heat the tortillas in oven or over stove just to warm so they bend easy and don't break
Pour Enchilada sauce in bottom of baking dish just to cover the bottom of pan
Then take and spoon in meat and ingredients and just enough cheese mixture
Roll tortilla and place in pan, repeat until dish is filled
Pour over the rest of the enchiladas sauce till covered and sprinkle rest of cheese on top
Bake for 20-25 minutes and then stick under broiler for 2-3minutes to make the cheese nice and bubbly, melty and a little browned
Garnish with cilantro, lime, shredded lettuce tomatoes, sour cream!

Obviously you can add really any ingredient to this if you don't like what is already in here or substitute( Chicken instead of beef and shred it, green sauce instead of red, no jalapeño, or corn, black beans, also you can just make it a cheese enchilada! It is delicious and I have never had any complaints) I just made it the other night and did half red and half green!! Enjoy!
