Ingredients:
Ingredients:
2 cups of water
3 medium to large potatoes, peeled and sliced
1/4th tsp. salt (more can come later to your taste)
1 sliced and chopped onion
1 cup sour cream
1 can chicken soup

1 tsp. parsley (or chopped fresh)
Chopped ham (or bacon if you choose)
Shredded cheese for topping

Directions:
Directions:
Boil water in large enough pan to make the quantity of soup you desire. Cook the potatoes and add the salt at this stage. Even before the potatoes are cooked, you may add the onions. Then stir in the can of chicken soup and the sour cream and the milk. Remember that with a milk and cream base, there must be frequent stiring. At the end, add the meat and be generous with the black pepper. Serve in a warm bowl or cup and add the cheese topping.

Personal Notes:
One day last spring, we needed some soup to deliver to the neighbor who was recovering from and injury. This turned out to be very tasty and quick. Although it is good anytime, it would be a good comfort soup too on a cold day.
