3 large onions
1/8th pound of butter
6 cups water
2 tbsp. beef stock
Pepper
(salt to taste)
Garlic clove or garlic salt
Toast
Cheese (can be fancy or just cheddar or even Parmesan will do)

Directions:
Take three large onions peeled and sliced into many pieces. Saute the onions in enough butter to keep them from burning. This process may take 20 or 30 minutes over a medium high heat. Many recipes will tell you to use 1/4th pound of butter, but to reduce the fat content, I usually use half that amount. Saute the onions until they start to brown. I also do this process in the same pan in which I make the rest of the soup (frequently the old pressure cooker bottom works well).

When the onions are ready, add 6 cups of hot water followed by six level tsp. of beef stock. At this point, add a generous amount of ground black pepper. Some garlic salt or crushed garlic clove is also good. The soup can simmer for one to three hours covered.

It is served in a bowl for a great warmer-up on a cold day. A special treat is to add a slice of toast with cheese on top of each bowl and then put it under the broiler or in the oven at 350º for 10 minutes.

I cannot remember when I first made some soup, but many years ago Barb and I found we liked French Onion Soup. We would order it in a restaurant and sometimes we were pleased, but other times were not. So I decided to try my hand and have made it occasionally many times since. One of the problems with giving you the recipes is that it varies each time. The following are just the basics.
