Dumplings
1 lb. baby beef liver, frozen, then ground
1 whole egg
1/4 c. soft butter
1 tsp. salt
pepper to taste
1/2 - 1 1/2 can bread crumbs
Soup
2 tsp. salt
3 potatoes, peeled and cut into small pieces
4 carrots
2 stalks celery diced
1 small onion
5-6 bullion cubes

Directions:
Directions:
Combine the ground liver with the other dumpling ingredients with the bread crumbs. Add enough bread crumbs to make firm and form into 1 inch balls.
Bring a 6 qt. pan of water to a boil. Add dumpling all at once.
Add ingredients for the soup base and cook on low heat, uncovered until potatoes are done. Simmer for 2 - 3 hours.

If you would like a beefy taste, add additional bullion cubes.
