Ingredients: Black beans, 2 cans (the quick way) 2 cups of dried beans may be soaked overnight or boiled until tender. Water--2 quarts Beef or vegetable stock (bouillon or canned) Onions (2 large chopped) Garlic cloves (2 or 3) or teaspoon of garlic salt Bay leaf (Grandma doesn't think it is soup unless the bay leaf) Bits of ham and /or sausage to taste Pepper

Directions:Bring the water with dry beans to a boil, and then simmer until soft. Or add the can of black beans to the boiling water. Start adding the onions and the garlic and the bouillon. The meat is added after the beans are ready, but continue the cooking for at least 20 minutes. The addition of black pepper or other spices may be done to your liking. Serving with a little grated parmesan or cheddar cheese will be appetizing and decorative. |

Notes: "Black beans are the aristocrats of beans," for they are "full flavored beans as well as more expensive than most." This was quoted from Crescent Dragonwagon cookbook, and I found that the soup produced was very tasty. They can be done somewhat plainly or dashed with various spices and fravors to make Hillbilly, Santa Fe, or Cuban styles. This is a plain and good recipe.
