Roasted chicken carcus(or just cooked chicken)
6 cups water
1 large onion(small pieces, but not minced)
Carrots peeled and sliced
Celery two sprigs
Peas one c.
Ground pepper, be liberal
Garlic clove or salt
Salt to taste (use sparingly)
Noodles or pasta of various sorts

Boil the remains of the chicken torso and bones for an hour or so, and then allow to cool so you can easily work with the bones--meat. You may cook any parts of the chicken, but you need to be somewhat more generous with spices if it has not started as a carcass. The chicken is separated from the bone and the broth poured through a strainer. The broth is then used for base stock, but I always want more, so water is added and chicken bouillon (one tsp. for each cup of water). If the broth is put in the refrigerator overnight, the fat may be skimmed off. Add the onions, carrots, and celery and garlic cloves (I get the skin off, cut the tips, and then slice thinly) and boil until the carrots are done--at lest 10 minutes. The peas and pasta or noodles are added last and cook until tender. Egg noodles are best but broken spaghetti, bow ties, or elbows work fine. Let it simmer until time to serve. Soup is always goood as left-over. If too thich, just add water and bouillon. If you wish the soup to be thicker, it makes a good topping served over baked potato.

In the summer of 2011, as we returned from Arizona, Barb had a check-up with Dr. Siddeqi for the breast cancer follow-up. There was a question of an abnormality in the chest x-ray and in pursuit of that issue, she had a PET scan. An abnormality showed up in the ascending colon, and after a colonoscopy and biopsy, she had a partial colectomy followed by chemotherapy. Probably before that time I had been doing some cooking, but started making chicken soup (good for healing). One day after serving a roasted chicken from Sam's, I saved the bones with some clinging meat, and here is how it is done. If necessary, it works fine to put in the freezer until a later date. The past two years I have done much of the cooking.
