3 eggs
3/4 cup oil
3/4 cup buttermilk
2 cups white sugar
2 cups flour
2 tsp soda
2 tsp cinnamon
1/2 tsp salt
1 cup drained crushed pineapple
2 cups finely grated carrots
3/4 cup coconut

Directions:
Directions:
In mixing bowl, beat eggs, oil, buttermilk, and sugar until well blended. Add flour, salt, soda, cinnamon, and blend. Mix in pineapple, carrots, nuts, and coconut. Pour into greased 9x13 pan, Bake at 350 for 55 minutes. When cool, ice with cream cheese icing or favorite icing.
