Cream Cheese Stuffed Strawberries Recipe

Ingredients: 24 large strawberries (firm berries are best) 4 ounces cream cheese (can use light or fat free) 2 tablespoons sugar (can use sweetener) just make it to taste – however sweet you like 1/2 teaspoon vanilla extract fresh mint leaves (to garnish) (optional) Depending on the size of the strawberries you might have to double the filling recipe.

Directions:Slice off the stem end of each strawberry. Use a knife to scoop out a little bit of each berry to make a hole in the center. Set aside. Combine room temperature cream cheese, sugar, and vanilla in a small bowl. I used a mixer to make it fluffy. Some recipes say to add a couple teaspoons of plain yogurt. Fill each strawberry with the mixture, mounding a bit of the mixture on the top of the strawberry. Garnish with a mint leaf and serve.
You can do everything but fill them in advance and then drain the strawberries on a paper towel before filling. I like them chilled when it is hot outside. |

Notes: Best made with firm imported strawberries. I like these made with relatively small strawberries so they are one bite treats. Left over cream cheese is good on toast .
