Big Cake (Small Cake)

6 eggs (4 eggs)
1 ½ cups flour (1 cup flour)
1 ½ cups white sugar (1 cup sugar)
1 tsp. vanilla (1 tsp. vanilla)


Topping:

½ and ½ mixture of white sugar and flour for the bottom of the pan and sprinkled on top

Beat eggs till light and fluffy – lots and lots of beating. When you think you have beaten them enough do it some more. Slowly add the sugar while beating to keep batter fluffy. Add vanilla/essence. Slowly beat while sprinkling flour into batter. Flour tube pan (angel food pan) and put some of topping mixture in the bottom of the pan. Place the batter in the floured tube pan and tap down. Place remainder of topping on top of batter. Bake at 350 º F for ¾ hour for a large cake.

Reta Johnson is my husband Jim Johnson's paternal grandmother who was always know to her grand children as Granny. I was privileged to be asked to call her Granny as well.
This cake can be made in two sizes - for small use the amounts in the brackets.
This is Jim's favorite and we used to take bags of white sugar to Granny in Barbados as it was so expensive there. Can use mixed essence (available in Barbados and specialty shops) instead of vanilla.
