Ingredients: To make one sandwich: 2 pieces dark rye bread about 100 grams thinly sliced corned beef Mozzarella cheese thinly sliced ¼ cup rinsed and drained sauerkraut - heated Kraft Russian dressing or home made Russian dressing
Homemade Russian Dressing 1/2 cup mayonnaise 1/2 cup sweet chili sauce 1 teaspoon drained horseradish 1 tablespoon sweet and sour pickles finely chopped 1 teaspoon fresh lemon juice 1 teaspoon Worcestershire sauce 1/4 teaspoon salt pinch of pepper

Directions:Place some cheese on half of corned beef arranged to be the size of the bread. Repeat with other half of corned beef. Place in Chinese wooden steamer and steam until cheese melts. If you do not have a steamer place it in a frying with a tiny bit of water and cover to steam. You do not want the meat to be wet. If desired heat bread on top of streamer or toast. Prepare sandwich in following order. Bread; One set of corned beef and cheese; Sauerkraut; Second set of meat and cheese; Bread. Serve hot. Dip in dressing or spread dressing on bread. To make Russian Dressing: Combine all ingredients in a small bowl and stir well. Will keep for a week in a tightly covered container in the refrigerator |

Notes: If you prefer toasted bread rather than steaming the meat and cheese you can make this as you would a grilled cheese sandwich and then add the warm sauerkraut. Russian Dressing recipe makes at least a cup and can be cut in half. This is worth the effort compared to commercial Russian dressing. For sweet and sour pickles I use some homemade sweet pickles or bread and butter pickles and some dill pickles. For a quick short cut just use some green relish.
