¼ cup brown sugar
1 cup all purpose flour (125 gr.)
½ cup butter (113 gr.)
1 egg yolk
1 egg white
small amount of finely chopped almonds
small pieces of glazed or maraschino cherries to decorate

Directions:
Directions:
Cream together the sugar, butter, and egg yolk. Add flour and mix well.This should be done by hand to ensure they hold their shape. Do not use an electric mixer.
Form into small balls (1 teaspoon of dough or a little less).

Dip each ball into beaten egg white and roll in finely chopped almonds and place on a greased cookie sheet.
Make a dint in the top of each ball with forefinger.
Bake at 350 º F for 5 minutes.
Press dint a little deeper and continue to bake for 15 minutes more or until lightly brown on bottom and golden on top.
Cool on a rack and decorate with almond flavored icing and a little bit of cherry. An alternative is to use jam but Mom never did

If you do not have almonds you can use any other kind of finely chopped nuts. Mom often used walnuts as that was what she had on hand. Pat Johnson makes a similar cookie using Peanut Butter Cookie dough. She rolls the cookies in finely chopped unsalted peanuts and fills them with strawberry jam..
