1 tsp oil
2 cloves garlic, minced
3/4 tsp thyme
1 lb chicken breasts
2 tbsp. cornstarch
5 cups broad egg noodles
1 cup frozen peas
1 onion, chopped
3/4 tsp salt and pepper
1 lb halved mushrooms
1/2 cup chicken stock
545 ml evaporated milk
1 tbsp. Dijon mustard

Directions:
In large non-stick skillet, heat oil over medium heat. Cook onion, garlic, salt, pepper, and thyme, stirring for about 5 minutes or until onions are softened. Add mushrooms, cook over high heat, stirring for 5 minutes. Cut chicken into pieces, cook for about 4 minutes. Set aside. Cook noodles for 5 minutes. Add chicken mixture, milk sauce, peas, and mustard. Stir gently to coat noodles. Pour into baking dish. Cover. Bake in 375 degrees for 30 minutes
