Crust:
¼ cup butter
1 ¼ cup chocolate cookie crumbs
1 tablespoon white sugar

Filling:
1 cup butter
3 cups semisweet chocolate chips
5 large eggs at room temperature

Chocolate Glaze:
½ cup semisweet chocolate chips
3 tablespoons whipping cream

Topping: (optional)
1 cup whipping cream
2 teaspoons white sugar
½ teaspoon vanilla

Crust: Melt butter in a saucepan. Stir in crumbs and sugar. Press into the bottom of an ungreased 8 or 9 inch spring form pan.

Filling: Melt butter in a large sauce pan over low heat. Add chocolate chips and stir often until they melt. Pour into a medium bowl. Add eggs one at a time beating well after each addition. Mix in vanilla. Pour over crust. Set the spring form pan on a piece of heavy duty foil and press foil around the pan to prevent water leaking in. Set pan in a roaster or other wide pan.
Pour boiling water in the roaster about ½ to 2/3 way up the side of the spring form pan. Bake at 425 º F for about 15 minutes. The edge should be set but the center still soft. Lift spring form pan out of the water and place on a cooling rack.
Cool for an hour and then chill in the fridge for at least 4 hours.
Remove sides of the spring form pan.

Glaze: Melt chocolate chips with cream in a small sauce pan. Stir often until smooth. Pour over top of the filling and smooth on top and sides. Let sit 15 to 30 minutes before adding topping.

Topping: Beat cream, sugar, and vanilla in a small mixing bowl until stiff. Drop in balls around the edge of the cake. Sprinkle with chocolate and chill until ready to serve.

Serves 8 to 12 or more. Very rich.

Can melt the butter and the chocolate in the microwave but be careful not to burn it. Can also omit the whip cream and serve with ice cream.
