Grated zest of 1 lemon
½ cup soft butter or margarine
1 cup white sugar
½ cup milk
2 eggs
1 ½ cups all-purpose flour
1 tsp. baking powder
pinch of salt

Glaze:
Juice of 1 lemon
½ cup white sugar

Directions:
Directions:
Cream the butter or margarine; add 1 cup sugar gradually and mix well. Add the lemon rind and eggs, one at a time beating well between each addition. In a separate bowl combine flour, salt, and baking powder. Add flour mixture and milk into butter mixture alternately. Pour into a well greased loaf pan. You can line the bottom of the loaf pan with waxed paper greased on both sides. Bake at 350 º F for ¾ hour. Remove the loaf from the pan while it is still hot (about 5 minutes after it comes out of the oven) and place on a wire rack. Combine glaze ingredients and mix well. Pour over hot loaf or use a pastry brush to apply it. Try to cover all sides of the loaf. Let cool on a baking rack.

This makes a relatively small loaf and will be rather thin if a full sized loaf pan is used. Mom always used a smaller Pyrex loaf pan.
