4 cups diced apples
3 tsp. cinnamon
1/3 cup sugar (1st amount)
4 1/2 cups flour
4 tsp. baking powder
3 cups sugar (second amount)
1 tsp. salt
6 large eggs
1 1/2 cups oil
1/3 cup undiluted orange juice concentrate

Pare and cut apples, add cinnamon and 1/3 cup sugar. Mix well and let stand while you make batter.

In a large bowl, mix by hand the flour, baking powder, sugar (2nd amount), and salt. Add eggs, oil, and orange juice concentrate. Beat until smooth and blended.
Drain all juice from the apple mixture.
Oil a 10in. angel food pan. Layer 1/3 of the batter, 1/2 of the apples, 1/3 of the batter, remaining apples, and remaining batter.
Bake at 325ºF for 1 1/2 hours. Do not under bake!
