3-4 pounds of chicken breast
12 flour tortillas (not low carb)
1 can cream of mushroom soup
1 can cream of chicken soup
1 green bell pepper chopped (optional-I never use)
1 Cup of chopped onion (I just chop one onion)
1 Tbsp Chili Powder
1 pound grated cheddar cheese
1 can Rotel tomatoes and chilies (original)

Simmer chicken in water or bake in oven until done. Dice chicken and save stock. Line bottoms and sides of well greased 3 qt. casserole with 6 tortillas, cutting to fit. Sprinkle with 2 or more tsp of stock. Mix soups, onion, pepper, chilies powder. Layer 1/2 of chicken in dish, cover with one half of soup mixture and then 1/2 of cheese. Repeat layers beginning with tortillas and ending with cheese. Top with can of Rotel. (Sometimes I mix the rotel with the soups and just do it all together.) Bake at 350º for one hour. May make early and refrigerate until bake it. If it doesn't look real wet, I add some more chicken stock, maybe 1/2 a soup can or so. The tortillas will soak it up.
