1/2 lb ground beef
4 - chicken thighs
2 - chicken breasts
3 - country style pork ribs
1 dz eggs
1 cup parsley
1 large onion
4 strips of celery
9 cloves of garlic
4- 15oz cans of Italian tomatoes
3 cans tomato paste
2 tbsp sugar
2 tbsp olive oil
salt and pepper
fresh oregano (optional)
fresh basil (optional)
fresh finnel (optional)
1/2 cup Parmesan cheese
1/2 cup bread crumbs
1 raw egg

Salt and pepper chicken and pork and broil until brown.

Boil 1 dozen eggs

Meatballs- In seperate bowl, combine ground beef, 1 raw egg, 1/4 cup chopped parsley, 1 chopped celery stalk, salt and pepper and Parmesan cheese. Mix well and add bread crumbs until mixture will form a ball. Roll out meatballs by hand and place on broiler pan and brown.

Sauce- In large pot, combine olive oil, onions, celery, parsley and simmer until translucent. Add garlic and simmer a few minutes longer. Then add the tomato paste and sugar to the veggie mix and stir frequently. Fry paste at medium heat for 2-3 min until pate turns slightly darker. Be careful not to burn the paste. Add tomatoes and 4 cans of water to vegetable mixture and stir. Last, add in the broiled meats, the boiled eggs, and season with salt to taste.

(Optional- add in Fennel, Basil or Oregano)

Simmer 2-3 hrs and let sit overnight.
