Favorite loaf of Bread, unsliced
Butter for spreading on bread
2 cans (5 oz. ea.) boned Chicken
4 hard boiled Eggs, chopped
1/2 cup chopped Ripe Olives
2/3 cup Mayonnaise
2 jars (3 oz. ea.) Old English Spread
1 Egg
1/2 cup soft Butter or Margarine for frosting

Trim crusts from bread. Cut loaf lengthwise (horizontally) into 4 slices. Spread 3 slices with butter. In small bowl, mix chicken, boiled eggs, chopped olives, & mayonnaise. Spread 1 cup filling on each buttered slice of bread. Stack slices & make 3 tier sandwiches using chicken mixture. Unbuttered slice is placed on top.

Mix cheese, raw egg, butter and beat until fluffy. Frost sandwiches (top & sides) with cheese mixture. Refrigerate at least 24 hours. Bake 15 minutes at 375º. Makes 7 or 8 sandwiches.

Option: Frost with Philadelphia Cream Cheese & sour cream (equal parts of each). Garnish with sliced stuffed olives.

OTHER FILLINGS:

--Chicken Salad--
3/4 cup finely chopped, cooked Chicken
2 tbsp. Mayonnaise or Salad Dressing
2 tbsp. chopped Pimiento
1/3 cup finely chopped Celery
Salt
Pepper

Combine all ingredients in small bowl & mix well. Chill. Makes 1 cup.

--Egg Salad--
2 hard cooked Eggs, chopped
1 tsp. chopped Pimiento
1/2 tsp. chopped Chives
1/4 tsp. Salt
2 tbsp. Mayonnaise or Salad Dressing
dash Pepper

Combine all ingredients in small bowl and mix well. Chill. Makes 3/4 cup.

--Pineapple Cheese--
5 oz. jar pasteurized process Cheese Spread
1/4 cup drained Pineapple

Combine spread and pineapple. Mix well. Chill. Makes 3/4 cup.

--Seafood Filling--
6 1/2 oz. can Shrimp or Tuna, drained, flaked
2 tbsp. chopped Dill Pickle
2 tbsp. Mayonnaise or Salad Dressing
1/2 tsp. Lemon Juice

Combine all ingredients. Mix well. Chill. Makes 1 cup.

--Creamy Pimiento Spread--
8 oz. pkg. Cream Cheese, softened
2 tbsp. Milk or Half & Half
1/8 tsp. Worcestershire Sauce
2 oz. (1/2 cup) shredded Cheddar Cheese
2 tbsp.. chopped Pimiento

In small bowl, combine cream cheese, milk, and worcestershire
sauce. Beat until light & fluffy. Add cheese & pimiento. Mix well. Chill. Makes 1 1/2 cups.

--Create your own spreads--
Add one or more of the following to a 3 oz. pkg. of softened Cream Cheese:
1-2 tbsp. Green Pepper
1-2 tbsp. Bacon, fried crisp, drained, & crumbled
1-2 tbsp. chopped Chives
1/4 cup drained, crushed Pineapple
1-2 tsp. prepared Mustard
2 oz. (1/2 cup) shredded Cheddar Cheese
1-2 tbsp. chopped Pimiento
1-2 tbsp. chopped Olives

Prepared Ham Salad or Piccalilli can also be used for filling.

BUTTER SPREADS:

Cream 1/2 cup softened Butter or Margarine until smooth. Add 1 or more of the following:
chopped Chives or Parsley
Garlic or Onion Powder
Seasoned Salt
Honey
Cinnamon or Nutmeg
any Cheese Spread
minced Onion

This is a favorite of my family that was made by my grandmother.

Sandwich loaf can be made with alternating white & whole wheat bread slices. A few drops of food coloring can be added to cream cheese frosting. Cashews can also be used for garnish.
