2 small skinless chicken breasts or 6 tenders
1 - 2 T vegetable oil
1 small onion
4 T tomato paste
1 T sushi ginger
1 T sushi ginger water
½ c curry base
⅓ c simple syrup
⅓ c half & half
1 t Tony's, then to taste
cilantro to garnish

Cut chicken into bite size cubes. Long slice onion (slice across the diameter, then into slices). Chop sushi ginger.

In a large skillet over medium high heat, brown chicken bits in oil. Add 1 teaspoon Tony's near end of browning. Add onions and cook 1 minute. Add tomato paste and cook 2 minutes stirring to prevent scorching. Add sushi ginger and water and cook 1 minute. Add curry base and heat through while stirring. Reduce heat to medium low and immediately add simple syrup and heat through while stirring. Add half & half and heat mixture continuing to stir. Cook 1 minute, adjust salt with Tony's and adjust consistency with half & half.

Serve over rice.
