Angel Hair Pasta w/Shrimp, Spinach, Tomatoes, & Garlic Recipe

Ingredients: 1/3 C olive oil 2 crushed garlic cloves pinch red pepper flakes 1 lb peeled, deveined, medium shrimp 1 T olive oil 1 T butter salt & pepper to taste 5-6 cloves garlic, thinly sliced 1 lb cooked, angel hair pasta 1 8-10oz bag fresh spinach, washed & cleaned 4 plum tomatoes chopped, seeded 1 tsp salt 1 tsp black pepper grated parmesan or romano cheese (optional)

Directions:1) In small saucepan place 1/3 C olive oil, red pepper flakes, and crushed garlic cloves...turn burner on lowest setting and cook for about 15 minutes...this should be a very low simmer...
2) in saute pan, place 1 T olive oil and butter into pan and melt...add peeled shrimp...do not crowd pan and you may need to do this in batches until all shrimp are cooked...cook shrimp until they are about 3/4 the way done...they should be mostly pink but not totally cooked through...salt & pepper to taste and remove shrimp aside to a separate bowl...
3) boil your pasta...when almost done, at this time, remove the crushed garlic cloves from the simmering olive oil and add sliced garlic...continue cooking at lowest temperature...
4) drain pasta (do not rinse) and return to pot (burner off)...spoon out the garlic from simmering olive oil, along with half of the oil and add to pasta...mix through...add spinach and mix thoroughly...the heat from the pasta will cook the spinach...
5) continue with adding tomatoes, shrimp (w/juices it may have collected), salt & pepper, and additional olive oil that was simmering...taste to make sure it is seasoned enough, adjust accordingly...
6) serve with grated cheese of your choice (optional) |

Notes: This is a very 'garlicky' dish with the infused olive oil, along with the sliced garlic...the sliced garlic when done will be lightly brown...
The cooked pasta & simmered olive oil will finish cooking the dish as it will wilt the spinach, warm the tomatoes, and finish the shrimp...use any kind of 'spaghetti' like pasta you like...
Depending on the size of your spinach, you may need to chop slightly but it will wilt considerably...you should remove any thick stems...
Substituting sun dried tomatoes for the chopped tomatoes is also a good option...toasted pine nuts add a nice textural component along with good flavor...
You can add cheese directly to your dish but not knowing how some folks like cheese or not, have them add it themselves...
