1 lb. pumpkin blossoms
1 small white onion
3 sprigs fresh parsley
1/4 c. butter
8 c. chicken stock
1 tsp. salt
1 tsp. ground white pepper

Directions:
Directions:
Remove the stems from the flowers & roughly chop into 2 in. pieces.
Chop onion into 1/4 in. pieces. Chop parsley. Melt the butter in a small
frying pan at medium heat & saute onions until limp but not brown. Add blossoms & saute for 5 minutes. Put stock & parsley in a medium-sized stockpot. Bring to a boil & reduce heat to medium. Add onions & blossoms, draining off & discarding any excess butter. Stir gently, add salt & pepper, & simmer for 10 minutes.
