Mashed Veggies Recipe

1 head cauliflower, cut into chunks, big stems removed
1 large potato, cut into 8 chunks (I leave the skin on)
1 carrot, shredded
4 oz cream cheese
1/4 cup Butter Buds or Molly McButter

Directions:
Directions:
Boil cauliflower, potato and carrot in a large pot until it can be pierced/broken with a fork. Don't over cook the veggies, or your Veggie Mash will be watery.
Remove from heat and strain all water out of the veggies.
Return veggies to pot
Fork mash veggies into an even consistency - it will not be smooth like mashed potatoes
Add cream cheese and butter buds
Mix until cream cheese is melted and evenly distributed

A recipe I made up when I was on Weight Watchers. A nice alternative to mashed potatoes.

With Butter Buds or Molly McButter, found in the spice/salt section of your grocery store, you probably won't need any salt.

If you don't have Butter Buds, you can use regular butter or margarine and salt.
