Stuffed Shells Recipe

1 tbsp olive oil
1/4 cup minced onion
2 cloves of garlic, minced
1 jar of your favorite spaghetti sauce
12-14 oz can of pizza sauce (I use Don Papino brand or crushed tomatoes)
1 box of large pasta shells
16 oz ricotta cheese
8 oz cream cheese, room temperature
12 oz mozzarella cheese, divided into 8oz & 4 oz
1/2 cup Parmesan cheese
2 eggs
1 tsp each dried spices: basil, oregano, parsley, salt, pepper
12-14 oz can of diced tomatoes

Make sure your cream cheese is soft

Sauce:
In a large pot, saute garlic & onion in hot olive oil
Add spaghetti sauce, pizza sauce and some herbs to taste
Simmer at med-low heat

Yummy Cheese Filling:
Mix ricotta & cream cheese in a large bowl until well blended
Stir in 8 oz of the mozzarella cheese and all of the Parmesan cheese
Add herbs, salt & pepper to taste (taste it - if it's good now, it will be good in the shells)
Beat your eggs in a small bowl and add to yummy cheese filling (make sure you do this AFTER you do your tasting)

Shells:
Start a pot of water and cook your shells per the box directions
When the shells are soft but still firm enough to handle without breaking, drain and rinse with cold water then return to pot. Put about 3 cups of cold water in your pan so your shells don't stick together.

Put it all together:
Spray a little Pam in the bottom of a lasagna pan
Drain that can of diced tomatoes and spread them evenly on the bottom of the pan (this will help keep the shells from sticking)
Using a large spoon, fill each shell with Yummy Cheese Filling and arrange tightly - they should be right up next to each other.
Spoon the sauce over the shells
Sprinkle with 4 oz mozzarella cheese

Bake at 400º for about 45 - 60 minutes - until hot and bubbly
Let sit for 10-15 minutes before serving (this is a good time to put in some garlic bread & toss your salad).

If you want, you can make half of the Yummy Cheese Filling and make a batch of Yummy Meat Filling and alternate your shells.
Yummy Meat Filling will be some ground beef and/or sausage cooked up into crumbles with a little onion, garlic, herbs and a little salt and pepper
