Sugared Almonds: 1/4 c. sliced almonds, 4 tsp. sugar
Sweet Sour Dressing: 1/4 c. vegetable oil, 2 tbsp. sugar, 2 tbsp. white or
cider vinegar, 1 tbsp chopped fresh parsley, 1/2 tsp. salt, dash pepper,
dash red pepper sauce
Salad: 3 c. bite-sized pieces mixed salad greens or iceberg lettuce
3 c. bite-sized pieces romaine lettuce
2 medium stalks celery, chopped (1 c.)
2 medium green onions, thinly sliced (2 tbsp.)
1 can (11 oz.) mandarin orange segments, drained

Directions:
1. In a 1 qt. saucepan, cook almonds & 4 tsp. sugar over low heat about
10 minutes; stirring constantly, until sugar is melted & almonds are
are coated; cool & break apart.
2. In tightly covered container, shake all dressing ingredients. Refrigerate
until serving.
3. In large bowl, toss salad ingredients, dressing, & almonds. Serve
immediately.
