1/2 c. vegetable oil
1 c. sugar
2 eggs, lightly beaten
3 ripe bananas, mashed
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. milk
1/2 tsp. vanilla extract

Directions:

1. Preheat oven to 350º. Grease & flour a 9x5 in. loaf pan.
2. Place oil in a large bowl. Gradually add sugar while beating lightly. Add
eggs & continue beating. Add mashed bananas & beat just untill
moistened; set aside.
3. In a separate bowl, combine flour, baking soda, baking powder, & salt.
Add dry mixture to banana mixture & beat just until moistened. Add
milk & vanilla, & continue beating just until mixed then pour into pre-
pared loaf pan.
4. Bake 59-60 minutes, or until toothpick inserted in center comes out
clean. Let cool in pan on a wire rack for about 10 minutes. Turn out
onto rack & cool completely.
