¼ CUP FINELY CHOPPED CELERY
¼ CUP GRATED OR CHOPPED CARROTS
½ CUP CHOPPED ONION
1 TSP PARSLEY FLAKES
3 CUPS WATER
2 TSP SALT
¼ TSP PEPPER

COMBINE INGREDIENTS AND SIMMER FOR 20 TO 30 MINUTES
OR UNTIL POTATOES ARE SOFT.

MIX 2 TBSP FLOUR WITH 1 ½ CUP MILK AND ADD TO POTATOES.
HEAT UNTIL THICKENED THEN ADD ¼ CUP BUTTER . STIR UNTIL MELTED.
