1 lb dried butter beans
2 C chopped onions
1 28 oz can of plum tomatoes
3 C water
1 C chopped ham or crisp bacon
salt & pepper to taste

Directions:
1) soak butter beans overnight per package instructions...you may need to change water a couple of times...you can also use quick soaking method that most packages list...

2) into a heavy pot on top of stove, add drained beans, onions, tomatoes, water, and ham...add pepper but refrain from the salt for starters being the ham is salty...bring to a boil, turn down heat and simmer for 2-3 hours...salt & pepper further as you taste at various intervals when checking beans...cook until beans are tender...

I had to add this recipe because when I was a kid, most of us (other than dad or mom) disliked this recipe...in looking at it now, I think I would like it...ha...

Butter beans are the SAME thing as lima beans...but I believe starting out with a dry bean would work best here...

Mom's recipe from her cookbook omitted the water to cook the beans in...I am guessing at 3 cups so watch water level and add more as needed...bottom line, the beans need to be tender...

I would add a ham hock instead of the chopped ham / bacon she used...score the ham hock and add it at the beginning...
