1 can whole tomatoes (San Marzano or Dei Fratelli)
1 can diced tomatoes (Dei Fratelli Seasoned)
1 can tomato sauce (Dei Fratelli Italian)
1 6 oz can tomato paste + 1 can water (Contadina)

One 1lb frozen package Birds Eye Pepper Stir Fry (onions green yellow and red peppers)
1 ½ lb ground beef or mix in some Italian sausage
1 can kidney beans, drained
1 can black beans, drained

Spices:
1-2 minced garlic cloves or 1 tsp powdered garlic
1 Tbsp Italian seasoning
Extra ¼ tsp each: powdered thyme, sage, rosemary, basil flakes
Dried celery leaves ½ tsp
Salt 1 tsp
Pepper ¼ - ½ tsp
Chili Powder 3 Tbsp.
Hot Mexican Chili Powder 2 tsp
Red Pepper powder 1/8 to ¼ tsp (or Chili pepper flakes/seeds)
Cumin ¼ - ½ tsp

Chop frozen package of pepper stir fry in food processor till chopped small to minced

Sauté peppers and onions in 1 Tbsp. oil till soft in fry pan

In Dutch oven pot, brown the ground beef with 1 Tsp. salt and ¼ Tsp. garlic powder. Drain fat when browned.

Add pepper mixture to ground beef in Dutch pot

Add all cans of tomato products. Slightly chop the whole tomatoes.

Add spices. Taste to your own liking.

Simmer for 1 ½ hours. Adjust seasonings to taste.

Add cans of drained beans. Simmer 10 more minutes

Serve with sprinkled cheese (Cheddar or Romano)
And with Corn Bread or Biscuits

This recipe won the Chili cook-off at Union Presby Church 2 years.
I have also added Ancho chilies sometimes. Also this is my spaghetti sauce minus the cumin and chili seasonings and with some added Italian seasonings.
