2 lb. pork spareribs, cut into 1 1/2 in. pieces
1/2 c. real maple syrup
1/4 c. apple jelly
1 tbsp. soy sauce
1/4 c. chopped fresh chives
1/2 tsp. ground mustard

1. Heat oven to 450º. Line 15 x 10 x 1 in. pan with foil. Place ribs meaty
sides down in pan; cover with foil. Bake 30 minutes.
2. Meanwhile, in 1 qt. saucepan, mix remaining ingredients. Cook over
low heat for 8-10 minutes, stirring occasionally, until hot & well-blended.
Remove from heat.
3. Reduce oven temperature to 350º. Remove ribs from oven. Uncover,
drain liquid from ribs. Turn ribs meaty sides up; brush with half of syrup
mixture.
4. Bake uncovered 30 minutes. Brush with remaining syrup mixture.
Bake 10-15 minutes longer or until ribs are tender & glazed.

Have butcher cut ribs across bones to form small riblets.
