12 Eggs, separated
15 Tbsp. Sugar (1 cup minus 1 Tbsp.)
6 Tbsp. Flour
1 can (8 oz.) Nuts, ground
2 cups Whipping Cream, whipped
1 cup Powdered Sugar
1/2 cup Cocoa
2 tsp. Instant Coffee

Directions:
Directions:
Separate Eggs. Beat yolks with sugar until very thick and almost white. Add flour and ground nuts. Mix carefully, but thoroughly. Beat egg whites until peaks form and stiff enough to slide out of the bowl cleanly. Fold egg whites into egg-nut mixture (do not stir). Distribute into 3 buttered and floured cake pans and bake for 35 minutes at 350º, or until cake tester comes out dry and clean. Set cake pans on wire racks until cool. Remove from pans.

Filling:
Combine whipped cream, powdered sugar, cocoa and instant coffee together. Frost layers, sides and top of cake. Refrigerate until ready to serve.
