4 qts. chopped green tomatoes
(11 c. tomatoes plus 5 c. green and red green peppers)
3 large onions, chopped

4 qts. cold water
1 c. salt

3 c. sugar
3 c. vinegar
1 c. boiling water
1/2 tsp. dry mustard
1 tsp. tumeric
1 T. celery salt
1 T. mustard seed
1 tsp. cinnamon

Directions:

Mix tomatoes, peppers, and onions in large container -granite or crockery.

Add cold water and salt. Soak at least 3 hours and can be soaked over night.
Rinse to get all salt out. Drain thoroughly. Put in cloth bag and hang to drip. Have as dry as possible.

Combine sugar, vinegar and boiling water. Add dry mustard, tumeric, celery salt, mustard seed, and cinnamon.
Boil 3 min. Add tomato mixture and simmer 10 min. Pack in sterile jars and seal.
