1 pound dried black-eyed peas
1/2 pound smoked meat (hog jowl, meaty ham hocks or smoked ham)
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoons (1/2 stick) butter
1/2 cup finely chopped bell pepper, for garnish (optional)
Pepper sauce, for seasoning at the table

Directions:
Directions:
In a large bowl, cover the peas with water and soak for 1 hour. Drain and discard the soaking water.
Place the meat in a 2-quart saucepan and add 2 ½ cups water. Bring the water to a boil, then reduce the heat to medium low. Cover the pot and cook for 30 minutes. Add the salt and pepper and the peas to the meat and cook until the peas are soft and the liquid has thickened, about 45 minutes. Add the butter and serve. Garnish with bell pepper if desired and serve with pepper sauce.
Delicious served with the juices from the pot spooned over white rice.
To make Hoppin’ John: Saute 1 chopped onion, 1 chopped bell pepper and 2 minced garlic cloves in 1 tablespoon vegetable oil until soft. Add 2 cups cooked black-eyed peas and 2 cups cooked white rice.
