Spring mix
Spinach
Fresh blueberries
Fresh strawberries, sliced
Candied or glazed Pecans
Herbed or plain boursin cheese, crumbled
Parsley

White Balsamic Caramel Salad Dressing:
1 egg
1 tsp of Dijon mustard
1 cup caramel
Pinch of salt
½ cup white balsamic vinegar
1 2/3 cup salad oil

Directions:
Directions:
Put the first 5 ingredients (egg, mustard, caramel, salt and white balsamic vinegar) into a bowl. Blend together using an immersion blender or hand mixer. Then, slowly add the oil and continue blending to create a creamy dressing. Makes about 3 cups.
To assemble the salad: Combine spring mix and spinach together and arrange on a salad plate. Sprinkle with sliced strawberries, blueberries, pecans and cheese. Drizzle salad with dressing and garnish with fresh chopped parsley, if desired.
