1 stick butter
2 cups Carolina white rice
4 cups chicken broth (homemade is best but canned works)
1 tsp. salt

Directions:
Directions:
Melt butter in a saucepan. Saute rice for a couple of minutes, stirring constantly. Add chicken broth and salt. Cover and simmer for 20 minutes. Remove from heat. Remove lid and place a clean towel over pot; replace cover. Leave for 10 minutes. Fluff with a fork and serve.

This is my Great Aunt, Theia Zoe's recipe. My cousin, Noula, says I am the only person alive who makes this recipe. Theia Zoe showed me how to make it. Nobody else wanted to learn. Enjoy. It tastes so good.
