2 large onions, finely chopped
1/4 cup olive oil
1 tsp. tomato paste
1 16-oz. package frozen spinach
1 1/2 cups water
salt and pepper
1 tsp. dried mint
1 cup white rice

Directions:
Directions:
Saute onions in oil until soft. Add tomato paste and spinach, and stir. Add water and bring to a boil. Add seasonings. Sprinkle rice on top. Do not stir. Cover and simmer until rice is cooked.
