1 eggplant
1/2 cup mayonnaise
2/3 cup seasoned breadcrumbs
1/4 cup grated parmesan cheese

1 berenjena
1/2 taza de mayonesa
2/3 taza de migas de pan sazonadas

Peel eggplant and slice 1/2- inch thick.
Spread both sides with mayonnaise and dip in mixture of crumbs and cheese. Coat both sides well.
Place in a single layer in a baking dish. Bake at 400º for 20 minutes.
