1/2 c. fresh cream
2 stalks of celery, chopped
1 shallot, sliced
1/2 sm. onion, sliced
1 tsp. Kosher salt
3 peppercorns
1 small bay leaf
1 sprig fresh thyme
butter for greasing
2 eggs

Directions:
Directions:
Preheat oven to 350º. In a small saucepan, gently heat until very hot.

Remove from heat - let steep 15 min. Lightly butter two ramekins. Crack egg in each, breaking yolk.
Strain cream into small bowl. Gently pressing solids. Spoon cream over eggs just until covered.

Bake 5-6 min. then broil until top starts to turn brown. Let rest a minute before serving.
